This is one of my favorite meals. My family doesn’t love it, but it’s growing on them. My Dad made it when I was a kid. I’m sure I was more enthusiastic about it than my ungrateful herd. (Dad, if you’re reading this just agree. Ok?)
Squash & Sausage
Ingredients
Acorn Squash
Jimmy Dean Sausage
Olive Oil
Brown Sugar
Butter
Salt & Paper
There are no measurements. It depends on how much you’re making. I used three squash and two tubes of sausage. The first and hardest step is to cut the squash in half. They’re really hard to cut, if you have a machete, use it. Scoop out the seeds. Season them with salt and pepper. Place them, flesh-side down on a cookie sheet lined with foil and sprayed with cooking oil. Cook in a 400 degree oven for 30 minutes.
After 30 minutes take them out of the oven and flip them over.
Put a tablespoon or so of butter and brown sugar in each squash half. Form the sausage into balls. The size is up to you, it really depends on how big you like your balls.

Put them back in the oven for another 30-40 minutes or until the sausage is cooked through.
That finger is as close as Jackson got to the squash.
